Cajun Tempeh Tacos

Serves 2-3

Takes 20 mins

  • 1 block Plant Power Tempeh
  • 3 tsp Cajun spice
  • Juice of 1 lime
  • Salt
  • Guacamole
  • 2 avocados
  • 1 lime
  • Handful of coriander leaves
  • Salt
  • 8 Corn tortilla wraps

  1. Add the tempeh to a mini food processed and blitz to form thick crumbs
  2. In a pan over a medium heat add a little olive oil, and then add the tempeh along with the Cajun spice mix and salt and stir through, cooking gently until it starts to go golden
  3. Squeeze the juice of the lime stirring through the Cajun tempeh mix
  4. Heat a pan over a high heat and place a tortilla into the pan, cooking each side until it starts to darken then shape into a taco shell and leave to harden, do this with all the corn tortillas
  5. In a bowl add the avocado, and mash until nice and smooth (you can leave it a little chunky) add the juice of a lime, salt and the chopped coriander leaves and stir through (you can even add in some red chilli for a bit more heat)
  6. Spoon some of the Cajun tempeh mixture into each taco along with some guacamole and some more coriander leaves and vegan sour cream and enjoy
