Curried tempeh chapati wraps

Serves 2

Takes 15 mins

  • 1/2 block plant power tempeh
  • 2 tsp medium curry powder
  • Salt
  • 50ml Plain yoghurt
  • 5 sprigs of fresh mint (leaves removed and chopped)
  • 50ml plain yoghurt
  • 2 tsp mango chutney
  • 2 fluffy Chapatis
  • 1 large tomato sliced
  • Coriander leaves
  • Cashews

  1. In a pan over a medium heat, add a little olive oil and crumble the tempeh into the pan along with the curry powder and salt Cool until nicely browned
  2. Mix the 50ml yoghurt with the fresh chopped mint
  3. Mix the remaining 50ml yoghurt with the mango chutney
  4. Spread the mint yoghurt onto the chapati evenly across the top Spoon over the cooked tempeh and sliced tomato and finish off with a drizzle of the mango chutney yoghurt with some coriander leaves and some toasted cashews
  5. Either wrap up abs enjoy or simply eat as an open pizza sandwich
