Curried tempeh chapati wraps
Serves 2
Takes 15 mins
- 1/2 block plant power tempeh
- 2 tsp medium curry powder
- Salt
- 50ml Plain yoghurt
- 5 sprigs of fresh mint (leaves removed and chopped)
- 50ml plain yoghurt
- 2 tsp mango chutney
- 2 fluffy Chapatis
- 1 large tomato sliced
- Coriander leaves
- Cashews
- In a pan over a medium heat, add a little olive oil and crumble the tempeh into the pan along with the curry powder and salt Cool until nicely browned
- Mix the 50ml yoghurt with the fresh chopped mint
- Mix the remaining 50ml yoghurt with the mango chutney
- Spread the mint yoghurt onto the chapati evenly across the top Spoon over the cooked tempeh and sliced tomato and finish off with a drizzle of the mango chutney yoghurt with some coriander leaves and some toasted cashews
- Either wrap up abs enjoy or simply eat as an open pizza sandwich
